It can be difficult if you are a newbie with a Dairy Free food allergy.
Dairy repeatedly ranks high in prevalence on the Top 8 food allergen list in the U.S. and Top 11 in Canada. The severity of milk allergy ranges from life-threatening (anaphylaxis) to relatively mild (hives), and researchers have discovered other pathways in which milk can cause an immune response. FPIES (Food Protein Induced Enterocolitis Syndrome) and EoE (Eosinophilic Esophagitis) are two types of allergic conditions (commonly linked to dairy) that affect the gastrointestinal tract specifically and can have a delayed reaction, making them difficult to diagnose. Note that milk allergy can appear at any time in life. Though “traditional” dairy allergy has a higher prevalence in infants and young children, EoE is being diagnosed in an increasing number of adults.
We understand the challenges someone with food allergy encounters. We use the best ingredients that we can find. We believe in leaving no one behind. We do not want people missing birthday parties or any other fun events because there are no Dairy Free bakery items for them to choose from.
Think of being a child in elementary school and you have an allergy to dairy. All of your friends are eating birthday cake. You are isolated and you must not sit at the table and eat the cake. If you do eat the cake, you could experience such negative symptoms as skin reactions, such as swelling, a rash, hives or eczema. You may have stomach pain, nausea, vomiting or diarrhea as a resulty of a negative dairy reaction. Or even worse you may have difficulty breathing,
Pictured above is Jess's first birthday cake. She was able to eat a birthday cake for the first time today because it was dairy free with dairy-free icing.
It took us 4 years and a $1000 for research to develop our buttercream icing. We use gluten-free and dairy-free products. We also have been asked for egg-free products.
Our dairy food bakery is top of the line, Creme de la creme. We are passionate about our dairy-free cakes because we do not believe no child should be left behind at home and especially at school. Children need to go to school and there should be no reason they should be left behind because of a dairy food allergy.
